Father’s Day is a time of celebration for honoring the males that have influenced our lives, namely Fathers and Husbands and possibly even Brothers or Uncles. As a Mother, I know that there is a special bond that is created between a loving Father and his children. This is a day for us to celebrate them!

Here are the recipes for a simple and delicious meal to honor the Dad in your life:
SAVORY RIBS:
Ingredients:
2 lbs St. Louis style pork ribs or baby back pork ribs
3 tbsp Dry Rub Mix (I used Famous Dave’s Rib Rub available at Walmart)
1 c. BBQ Sauce (I used Sweet Baby Ray’s brand)
Rub the ribs with the dry rub mix on the top and bottom and let sit overnight in the refrigerator.
Easy Roasting Method: Place the ribs in one layer into a disposable foil roaster pan (11x9x2), cover tightly with foil, and bake at 450 degrees for one hour and 20 minutes. After that, remove from the oven and put on your favorite BBQ sauce. Place the ribs on the BBQ over low heat just until the sauce sets. This easy method makes surprisingly tender and delicious ribs.
TWICE BAKED POTATOES:
Use one russet potato per person. Multiply the recipe depending on how many guests you have.
Ingredients (per person):
1 Russet Potato
1/3 c milk
1 tbsp sour cream
1 slice of cooked and crumbled bacon
1/2 tbsp butter
1 tbsp cream cheese
2 tbsp shredded cheese
1 tsp cut chives.
Scrub the skin, and cut off a small amount of each end before roasting. Place in oven for 1 hour (20 minutes after you place the ribs in). Remove potatoes, and cut in half lengthwise. Use a spoon to take out the potato filling, leaving about ½” border intact, which will become like a small boat to refill. Put potato filling into a mixing bowl. Add other ingredients and mix together until mixture is smooth. Spoon mixture back into the potato boats, cover with shredded cheese and put back into the oven just until cheese melts.
FRESH COWBOY SALAD:
This is a light and easy salad that is refreshing and healthy.
Serves 6.
Ingredients:
1 c. Cucumber, cut into thin slices and then into quarters.
1 c. Garbanzo beans
½ c. White Cannellini Beans
2 Carrots, cut thinly on an angle
1 c. Canned Corn Kernels
½ c. marinated Artichoke Hearts, diced
10 Black Greek Olives, cut in half
½ c. Sweet Grape Cherry Tomatoes, cut in half
1/8 c. Italian Dressing
Mix all ingredients together and dress lightly with Italian Dressing. To dress the plate, arrange lettuce leaves in a circular pattern and then gently place Cowboy Salad on top. This is a delicious salad where all the natural flavors can shine through.
